Broccoli and Cauliflower Croquettes

A great on-the-go snack for babies. Delicious for adults too with a dash of sriracha or other hot sauce. They freeze well. Once defrosted I put in the air-fryer for a few minutes and they are just as good as when they are fresh out of the oven. They’re so nice, I always make twice the quantity below.

Broccoli and Cauliflower Croquettes

Ingredients:
1/2 head of broccoli, roughly chopped
1/2 head of cauliflower, roughly chopped
1 egg, lightly beaten
3 tablespoons plain flour
Salt and pepper to taste
Oil for frying (I use olive oil)

- 2 cups broccoli, cut into small florets
- 2 cups cauliflower, cut into small florets
- 1/2 cup grated parmesan cheese (optional)
- 1/2 cup all purpose flour
- 1 teaspoon salt
- 1 teaspoon garlic powder

Prep time: 10 mins

Cooking time: 25 mins

Ingredients

A medium sized head of broccoli

A medium sized head of cauliflower

2 free-range eggs

1.5 teaspoons garlic granules

1 teaspoons dried oregano

80g grated cheddar cheese

50g bread crumbs

A little spray oil

Method

  1. Cut the broccoli and cauliflower into florets and rinse. Place in a steaming basket in a pot with a little water for 2–3 minutes.
  2. Line a baking tray with parchment/baking paper.
  3. Place the cooked cauliflower and broccoli on a large chopping board and chop very roughly with a knife. Place in a large, mixing bowl.
  4. Add the 2 eggs (beaten), the garlic powder, the bread crumbs, the oregano and mix well.
  5. With clean hands, shape handfuls of the mixture into croquettes and place side-by-side on the baking paper. Spray the croquettes with a little oil.
  6. Place in the oven for 15–20 minutes. They can be lifted gently with a fish-slice and placed in a zip-lock bag in the freezer once cooled.
